Jack Rescipe,
Get large old pot.
Boil for 15-20 mins.
Remove oil from the top.
Throgh away large pot and Jack.
Keep oil for leather worK boots.

cut jack in fist sized pieces, place in crap trap, set crab trap. check trap next day. cook and eat crabs, repeat
that stuff is the best crab bait ever but don't let the crabs eat too much or they will taste like jack

Many people speak of the edibility of fish we shoot. I find that many people become fish snobs at some point. Only the best will do and the list of fish that people will consume becomes narrower as their fishing prowess increases. Truth is that when any fish is prepared well it has the potential of becoming a good meal. When I was a very young angler I remember catching a 30+lb jack crevalle. I had intentions of releasing him but as I walked my subdued catch torwards land from the middle of the bridge we were fishing on a barracuda helped himself to the back third of the fish. I hurriedly walked him the rest of the way and took what was left home since throwing it out seemed like a monumental waste of fresh protein. I presented my dark fleshed trophy to my mother and asked her to call on all her powers of culinary preparation to serve the fish for our family. My mom had never seen a jack crevalle but as she separated the large fillets from the bone she noticed two things first the fish had a large trianglar groove of very dark red flesh along it's lateral line and second the fish was fatty and probably stong tasting. Without going into a long discussion an the exact method of prepapration let me say that I did not regret bringing home said fish. Everyone who sat at the table found it pleasingly paletable and not overwhelmingly fishy or otherwise objectionable. I have since taken several home and although they are not my favorite fish to eat I would have a harder time stomaching shooting a pile of them just to take a picture and reduce them to chum or crab bait. I am not vilifying the practice of shooting them and using them for such a purpose but shooting them "just to watch 'em die".....not for me thanks.
I bet you would be surprised to find out just how good just about any fish can taste if you bleed 'em, ice 'em and apply a recipe that is appropiate for the species in question. Just my 2c....Happy Hunting!!

When we got back to the house we went to the water front and found some people who thought they were gold. We gave them the Jack and 2 drum ,they were nothing but smiles. One guy said "Yo man I can only take one of dem fish, Ya'll got to hook me up with that Jack". I almost pissed my pants.

You people just don't get it what we here in Louisiana are doing. Ever hear of competition? We compete for many different kinds of fish, edible or inedible.
This way the inedible ones don't have a chance to eat all our snappers.

another ones treasure. I have been charged with being a "tinosa" (vulture for those bi-lingually challenged). I remember tagging along on a deer drive in Illinois afer having put in a week of bowhunting on the same land. Every drive we did ended with several deer on the ground. After driving the deer it was customary to go over for a look at what the drive produced and we stood around as the locals gutted and piled the deer into their trucks. One look at the gut piles and I noticed nobody was taking the hearts. For me nothing beats pan fried deer heart so I asked if I could help myself to the 'leftovers". The response I got was "we don't eat the guts...have at 'em'. So I left Illinois that November with my first pope and youg whitetail and a bag of hearts that kept me in my favorite breakfast delicacy for the rest of the year. Remembering the faces my request got from my hosts keeps a smile on my face to this day. Happy hunting!!

Question Louis...Is this a running standing sheet for the year?
I noticed that each category is broken down by Scuba, Skin and Women. I noticed that under the "Gar" category you currently have 2nd and 3rd place under both Skin and Scuba...how is that possible? Just trying to understand how your derby board works. (Gar is shallow water and you only get it snorkeling?)
Looks like the women's competition is between the Donaldson sisters...they are all over it :D

Yes, Bigsey, this is a year long competition. A fish shot without a tank can count in the skin and scuba division as well as long as it's big enough.
The Donaldson's wife and daughter team do own the womens division,, there's just not alot of women doing it.
Competition starts Jan. 1st and ends Dec. 31.
The Hell Divers also have their own club board, which is very similar.

Sweet...thanks! Looks like you dont have much competition in some categories. GL throughout the year. Kinda cool that you can use the same fish on different boards too!
I was going to suggest this before, but I think it would be a cool idea to have a board similar like that on SB. That or even having a record board too with some way to verify the weights with pictures and witnesses...etc.

Don't forget my old lady. She's gonna rule the women's division in '05. She shot several fish this year that are bigger that some of Claire's.

I agree with you Apex.
I've eaten jack cravelle that was prepared correctly and had no decernible fishiness to it. This means gutting, bleeding, icing, removing blood line and eating fresh. I've also eaten Black drum that tasted just like it's cousin, the red drum (redfish). I know the larger Black drum get worms in them, much like larger AJs.

I like the way you're thinking Biggsy,<-- (spelled correctly)
To submit fish for the council board,, LCUDC, which is all the clubs in Louisiana, you need a catch witness, a weight witness and your fish has to be weighed on a state certified scale, current fishing lisence too. For state records and top 10's which we also keep track of you need the 2 witnesses and a picture of the fish.
We don't win money so there is no reason to cheat,, just RESPECT!!!! It's alot of FUN!!!
