So I'm more than a little lost on the whole gopro front. Since I'm not looking to buy a new one, any suggestions on which model of the older ones to buy?

Go pro hd hero any version is fine they just have different mounts

What Daniel said. HD Hero is the one that just got replaced by a newer Hero 2 a few months ago.

So GoPro Hero, GoPro 960 etc are all about the same? Should I be looking for anything that includes more than the camera, housing and headmount strap thing?

Hero hd is better than the 960. Probably just headmount and a bag of various mounts that they also sell seperately too.

There are actual tech differences between the models.
QUICK GOPRO BUYING GUIDE:
1. Old Gopro HD Hero 960: This is the less expensive model of the GoPros. The number stands for the highest resolution you can go with this camera. The max resolution for this model is: 1280×960.
In this resolution your are shooting 4:3 video which means it is more or less square (like the old TVs). To shoot widescreen (16:9) you go down to 1280x720 pixels with this model. It is called "half HD". It's still a pretty big resolution compared to normal NTSC (SD = Standard Resolution, which is 720x480)
2. Old Gopro HD Hero 1080: With this model you can shoot higher resolution videos. Full HD resolution shooting of 1920x1080 pixels. You can still go down to 960 or 720 with this model to save space and it is easier to cut and edit on a slower computer. Other than the resolution everything else is the same as the GoPro 960.
3. New Gopro HD Hero2: full HD resolution (1920x1080) (same as the old GoPro). Plus new functions: Possibility to choose from different shooting angles(super wide: 170, wide: 120 and normal). Plus: Slow motion function: 60FPS (half speed) and 120FPS (quarter speed <- looks awesome for sports).
Also this model has much more information on the little LCD, also 4 red leds (one on each side) to show that the camera is in recording mode.
Just to explain the GoPro box(packaging) names like: surf edition, outdoor edition, helmet hero, motorsport: It stands for accessories. The camera in the box is absolutely the same. IE: helmet hero: has a helmet strap, motorsport has a suction cup mount.
Interesting side note: The new Hero2 outdoor edition = old Hero helmet edition (accessories wise: it has a 3 way helmet strap)
I just bought my Hero2 today.
