Anyone know any good/simple recipies for Kingfish?
Don't really know how i should make it, and don't want to mess this up....

Kingfish isn't my favorite fish to eat, but I would marinate it in Mojo (overnight) or italian dressing (3-4 hrs). Slap it on the grill, and pull it off when it flakes.

I am very simple with all me fish. And unlike most people I enjoy eating Kingfish just as much as just about any other fish.
Lemon, onion, salt, chile powder, and season-all
in oven or grill for about 15 to 20 minutes.
it taste to enough to eat and that is all that matters to me.

Keep it simple salt, garlic, dash of paprika (for color), parsley flakes and oregano. You can also prepare a basting sauce with lemon/lime juice butter and salt. Slap the fish on the grill and baste every time you turn them. They will come out succulent and moist. The basting sauce helps two things. First it keep the fish from sticking to the grill and second it keeps the filets moist. I know some people like smoked kingfish but you could smoke a old sneaker and get it to taste OK. Quality fish that is as fresh as those we harvest ourselves I think are deserving of something a litlle better than a trip to the smokehouse. Save the woodchips for those jumbo mullet....prepare your kingfish while it is fresh and for best results avoid freezing and thawing. Happy Hunting!!

Apex, how do i make that lime juice / butter / salt baist? What are the proportions?

Big Pig, gonna try that one tonight! Sounds simple enough.... do i use the latin style mojito that has the naranja agria? Or some other type of mojo?

I use the Mojo Crillo. You can find it in just about any grocery store

Try using your kingfish for some Poor Man's Lobster. Here is the recipe from the Florida Sportsman's Forum
Fish: KINGFISH
1) Bring water to boil
2) Add 1 Bag of Crab Boil (Zartans)
3) Boil Seasons for 10 mins. (season water)
4) Remove bag
Fish: Kingfish doesnt matter if fresh of frozen cut into 1in square s
with no skin or bones.
5) Add fish to boiling water ( boil till fish comes to top)
6) Remove fish and put into pan and poor melted butter over it
7) Let cool a little bit.
8) Grab Cold beer and be prepare for your tongue to slap your brains out!

how ever much lemon you want. Cooking is more about feel to me than measurements. Start adding until you think it is enough and then add a little bit more. Last night I had a standard cake pan about 8x14 with about 12 or 14 pieces of Kingfish (pieces about 4"long X 2" wide and 1/2 thick and I place a round slice of lemon & slice of onion on each piece.

Step 1: Soak kingfish in favorite marinade for 2-3 hours.
Step 2: Preheat grill.
Step 3: Place damp piece of wood on grill (preferably cedar).
Step 4: Place marinated kingfish on board.
Step 5: Cook until fish is opaque and flaky.
Step 6: Throw away fish and eat board with rice pilaf and a nice California Chardonnay

when in doubt try this...

this is simple and bakes up real good, it's even better with king mac.
1 large onion, sliced into rings
1 large tomato, sliced
2-3 limes(depending on size), sliced(or fresh lime juice)
2-3 lbs of sheepie, king mac or spanish mac boneless fillets
some olive oil or butter
your favorite seasoning, rub or just salt and pepper, i prefer tony chacherie's
foil
wash the fillets and check for bones, scales, remove dark flesh,etc...
dry the fillets, brush with oil or butter. sprinkle liberaly with seasoning. spread onion out in a layer on a piece of foil at least three times as big as the fillets. lay one fillet on top of the onion and cover with tomato. lay on another fillet and cover with lime(or sprinkle with fresh lime juice). wrap foil to form pouch and bake in a 350 deg oven or grill for about 30-40 minutes depending on fillet thickness or grill temperature . remove from oven and unwrap carefully, serve with cajun rice or grilled sweet potato's

I have used a very similar recipe with tomatoes and onions making sure the fish was sitting on top of an onion bed so it had a chance to drip some juice off of it. I used spec trout and it comes out great. I ad garlic and parsley too. I had people eat that dish that would not normally eat fish at all.
As for the above post. I would MUCH rather eat fresh mullet than fresh king. Mullet is not bad at all if you clean it while it is still alive. Not great, but not as fishy as king. Just the opposite of grouper. Although my buddy does the overnight salad dressing thing with king and he likes it.
When I was playing little league in Tampa we used to have a party once a year a the end of the season. The coach's who were Latin made a dish called crab enchalata. Not sure how to spell it. They made it similar to spagetti but with crab meat, I think it was blue crabs. Cooked outdoors in a very large iron pot over an open fire. Anybody ever heard of this? I am 46 now and still remember it.

smaller kings cook up pretty good, they don't call the big ones "smokers" just for the way they run when hooked. smoked king makes great fish dip ;)

If you like sushi kingfish makes delicious sushi. Honestly!!! People don't believe me till they try it then they love it. But out of all the fish in the ocean for sushi tuna and wahoo are my favorite! If you haven't tried wahoo you don't know what your missing!!!!!!!!!!!! Filet like a regular fish and loin it as i like to call it simply section it into big as knife size sections and go on one side of the blood line and out and repeat on other side. Its a terrific way to filet dilecate skinned fish like wahoo cero and king!!

Marinate Fresh steaked King in Italian dressing, grill, place fresh grated parmesan cheese on it right before its done.
