Here's the best one I've found.
You can us 8 oz fillets or steaks, your choice, but try to cut them so they are no more than 1 1/2" thick.
What you'll need:
1/4 cup hot sweet mustard
1/4 cup minced Vidalia onion
Juice of one lemon
2 teaspoons minced fresh dill
A pinch of coarse salt.
An hour and a half before you plan to start cooking, mix all these ingredients in a small bowl.
Rub the mixture into the steaks and wrap them in plastic wrap then put them back in the fridge for an hour.
Get the smoker temp up to around 250 F. You can use any hardwood you like for flavoring.
Take the salmon out of the fridge and let it come to room temp for around 15 minutes before you throw it on the rack.
Try to keep the cooking temp between 225 and 250 and your steaks should be perfect in around 45 to 55 minutes.
