Seacrecher's Octopus Pasta Salad

12oz package of multicolored spiral pasta
1 medium sized octopus (1 to 1-1/2lbs)
3/4 cup minced carrots
3/4 cup of minced celery
3/4 cup of Garbanzo beans
3/4 cup of sliced or chopped black olives ( I prefer to use Garlic stuffed green olives)
1 small jar of marinated artichoke hearts
1 bottle of Newman's own Balsamic Vinigrette Dressing.

Boil &drain pasta. Rinse in cool water. Boil and clean octopus as previously described. Cut tentacles into thin pieces at a 45 deg angle. Mix all ingredients in a large bowl. Add dressing to taste. I also add a little course ground black pepper. Let stand in frige overnight, mixing occasionally. Serve cold with a Tall frosty one :toast:
For an added touch throw in some slivered almonds.
