I see the Captn Crunch recipe. Anybody have other good ways to cook up a hogfish?

simple shallow pan frying
rub the fillets with salt, pepper, garlic powder, and some thyme
in a frying pan, heat a mixture of equal parts olive oil (for flavor) and canola oil (for increased smoking temp). you only need enoug to cover the bottom of the pan in a small layer of oil.
fry untill done
serve over white rice with butter and thyme (tie in the flavors). or make a sandwich out of it...

feel free to use whatever spices you like...kick it up a notch (emeril style) with a mix of chyenne pepper, paprika, garlic, cumin and some salt
i've also had a really good store bought fish rub, which had a nice dill flavor to it. i'm planning on figuring out what the ingredients are and making a rub from scratch
