Made these last night for a warmup for our low country boil.
First cut the Aj into fingers. Then soak them in lime juice/fresh garlic(powder if you like)/pepper. Do not soak to long our they will basicly cook in its own juice. The longer you soak the more twang the fingers will have so you might want to start with 30 minutes first.
You can fry them or grill them your choice. I like the fried ones. Then baste with either buffalo or hot sauce and enjoy.

got a small AJ the other weekend, did not know how to cook it. every one told me they are VERY 'fishy' tasting. well looked on here, and there you have it, just as always some one has an answer for just about every thing (gotta love this group).
well i thawed some meat out, let it soak in lime for about 30 min or so then relized it is too late (after 10 pm) to grill so i will try to fry them up. whipped up some eggs and smashed up some ritz crackers for a breading. put in (into the egg wash) what i thought was alot of hot sauce. by then the fish was soaking in lime juice for about 40 min. started to fry a piece up... whoo that was very mmmm bitter/ tangy :( ? just about the only taste was lime so i dumped the rest of the lime juice out and added some more hot sauce to my egg wash. fried up another. when it was done and cooled off a bit. put more hot sauce on tried it. oh my god that is good:D :eek: . i am not one to like 'fishy' taste but all i tasted was the hot sauce, and ranch (had to get the entire feeling of wings :p ) and just a bit of tang from the limes. great stuff. no i think next time i am down south i will actualy look for AJ's. they are small in that area (32''-42'' range) but damn this was good.
Two thumbs way up!!! (just mind the lime juice.... to much is a bad thing, can't get too much hot sauce). one more note, is there a way to 'firm' up the meat? to keep it from falling apart.... have an idea about mt dew will post that in a new thread to see if i can get an answer.

Tried this the other night with snapper. 2 big thumbs up. I used onion ring mix for my batter. Tasted just like tender buffalo fingers.

I guess some people don't like AG, but I don't understand the fuss. I fillet them, marinate them (different ways) and put them on the BBQ and they turn out great. I will have to try the "fingers",
