braised manatee

2 pounds manatee meat
1 tsp baking soda
1 Quart water
2 tbs butter
flour
1/2 cup chopped celery
1 cup diced carrots
4-5 potatoes diced
1 lemon
salt and pepper

Soak manatee meat in soda and water for 1/2 hour this helps minimize the gamey taste especially necessary if it is /was an older animal.
cut meat in small chunks remove any fat and powder with
flour.
heat butter in a heavy pot and brown the meat.

add celery, carrots, potatoes, and juice from lemon
Add enough water to cover and simmer until meatis tender and the flavors are blended salt and pepper to taste.

2 manatee flippers
3 slices bacon
2 onions chopped
2 carrots chopped
5 potatoes cut up
1 tsp salt
1/4 tsp pepper
3 cans biscuits or make your own from scratch

cut skinned flippers into serving size chunks.
Fry the bacon
add the flipper s to the bacon until browned
reduce heat and simmer until partly tender.
add onions and cawwots and 1 cup water ,boil 30 minutes.
add potatoes and cook an additional 15 minutes adding water if needed
cover top of pan with biscuits
bake at 425 for 20 minutes ,serves 6

hey now! I love manatees. . . they taste like chicken!
They're God's gift to boaters, road kill for the water.

Tried it with Manatee but very gamey... I suggest dolphin meat; taste more like beef than chicken.
