3/4 cup-maple syrup (100% pure, not pancake syrup)
1/4 cup-soy sauce
1/4 cup-fresh black pepper (very coarsely ground)
cooking spray
4-12 oz grouper fillets
6- 12 oz. beers
1-beer funnel
*Combine maple syrup, and soy sauce in a bowl. Whisk vigorously.
*Pour 2 12oz. beers in beer funnel, and consume.
*Place grouper in a gallon ziploc, and pour in the maple-soy mixture shaking it to coat all the fillets. Carefully sqeeze out all the air out of the bag, and seal.
*Let the fish marinate at least two hours in the fridge during which you should fill the beer funnel with 2 12oz beers, and consume.
*Coarsely grind the black pepper onto a plate.
*Spray one side of each fillet with cooking spray.
*Press each sprayed side into the black pepper, and put on a plate pepper side up.
*Heat up grill to very high temp. Cook grouper pepper side up for 3-5 minutes, and then flip until done.
*To accompany this dish, I recommend 2 12oz beers poured into your beer funnel.
