View Full Version : Etching knife? 3"-4" serrated blade for starting filet...

I saw a guy cleaning fish the other day. He used a short bladed serrated knife to make the cut through the skin along the dorsal edge of the fish before filleting. He called it an etching knife. It made the cut through the skin but very little of the filet. Then he changed to a regular 9" filet knife and finished with that. Anyone heard of this knife and know where to find it?

If ya hit the boat shows (or probably the flea market) they have this guy selling old rental commercial knives. I've picked up a decent chef knife and my brother John picked up a serrated one like you talk about. Check them out

I use a serrated knife to outline tough skinned fish i.e. triggers, I finish with a filet knike though. Sometimes Ill use serrated to cut through the bones. I like it because it keeps my fillet knife from going dull as quickly
