cut fish into the size strips you want. ( remember they will shrink)
Cut against the grain if you don't want it too stringy.
Ingredients:

one part liquid smoke
one part brown sugar
three parts soy sauce

mix ingredients,
pour over the cut up fish
let sit in fridge overnight
put them in the dehydrator until they are done,
(turn them every hour or so or they will stick]

this works good on amberjack or any other big size fish.
taste real good !!
