Politically Correct Shark's Fin Soup
4 cups chicken stock
2 cups ham stock
1/4 teaspoon salt
2 slices ginger root
1 teaspoon soy sauce
1/2 teaspoon sugar
1/2 teaspoon sesame oil
2 oz. bean thread noodles, soaked
1/4 cup mushroom sauce
1/4 cup bamboo shoots, finely shredded
5 Dried Black Mushrooms soaked and shredded
2 tablespoons green onions, finely shredded
2 tablespoons cornstarch paste - (1 part cornstarch dissolved in 2 parts water)
1 dash white pepper
8 sprigs cilantro
Preparation:
Bring soup stock to a boil; add the salt and ginger, and cook over medium heat for 1-2 minutes.
Discard ginger, and add the soy sauce, sugar, and sesame oil.
Drain the bean thread noodles and add to the stock, along with the remaining vegetables.
Boil over medium-high heat for 2 minutes.
Thicken with cornstarch solution.
Sprinkle with white pepper and garnish with cilantro to serve.
Note: Have extra soup stock on hand because the bean thread noodles soak up liquid.

What kind of shark fins do you guys recommend for soup? I hear nurse shark sucks but don't know about the others.

I have heard and read that nurse shark was good to eat. so I did. It was about a 3 foot log one and it was actually very good. probably shouldnt admit that but as sharks went i will take it over a blacktip but not a mako. mako is damn nice on the grill.

FA, I think you'll eat anything!! Carp on the grill?? Sabiki surprise featuring Greenie, Pogies, and Hardtails???? Just joking around. Mako is excellent. We get a few trolling for tuna early in the spring. Fun fight as well.

I am a big shark fan. Just curious how the rest of you prepare yours. I usually grill it with teriyaki but I also cut it into small chunks and blacken it.

I blacken thresher shark, using butter and Prudomme's (sp?) blackened seasoning with and bit of cayenne pepper.

marinate shark in beer and minced garlic for about three hours, discard marinade. season with your favorite seasoning(paul p's, tony's, everglades, etc) oil the grill and the fish,butter or olive oil work best. grill on a very hot grill till it's warm all the way through and starts to flake.
the trick to good shark is to clean them and ice em down asap, if they lay on the deck for a while they spoil real quick(execpt for mako's)
tiger and hammerhead seem to be the worst when it comes to this, bulls a close third.

Nurse Sharks have no fin value so we just cut them loose!
Shark meat. is .50 per lb....Fins are $26 per lb. You do the math!

The original recipe at the top is pretty close to a traditional shark's fin soup recipe.
The bean thread & mushrooms do a good job of approximating the consistancy of the fin.
The actual fins are a buttpain to prepare; you have to skin the critters out & scrape the insides, something that's easier done to a "reconstituted dried" fin.
