3 whole cleaned yellowtailed snapper (scaled, gutted, and Gilled)
1 part green peper sause
4 parts lemon juice
crushed red peper-to taste
salt
peper

take snapper put 3 slices on each side-just through the skin from top to bottom
mix juice, peper sauce, and crushed red pepper
pore over fish and let soack for 30-45 minutes (the eyes will fog up)
place on grill salt and peper to taste and bast with the sause

hoe you like this i use it on the smaller yellowtails and grunts i get
it is spicy but tasty :D

i do a similar thing..

but i just pack the gut cavity with lemon slices, some onion slices, fresh garlic and different herbs (usually tyme or rosemary), and a bit of salt/pepper to taste

works great on small hogs too, those 12.5 inchers that are hardly worth filleting

i know here in the keys we dont get a lot of those 20# hogs
