FANTASTIC recipe, best grouper I've ever had even if it is a little froo-froo.


Sprinkle one large grouper filet with 1 part cinnamon and three parts McCormicks Sweet and Spicy Caribbean Jerk seasoning

Place grouper in hot (6-8 on the stove) pre-oiled (OLIVE-OIL) skillet. Cook evenly on both sides until nearly done.

While grouper is in the skillet take 3 tablespoons of sugar, 1-2 teapoons of cinnamon and 1 teaspoon of nutmeg(or use 2 tablespoons of Pampered Chef Cinnamon Plus) and carmalize it over high heat, when sugar is liquified and nice and hot slowly add molasses and cook until mixture is consistent. Add crushed pecans or walnuts and drizzle mixture over filet. Pre-heat oven to 425 and bake fish until complete(aprox 7-10 minutes). Place finished filets over a bed of cheese grits and serve immediately or the glaze with get lumpy and harden.

Best served with lightly cooked snow peas and a nice Fetzer.

mmmm......cheeeeezze grits.......I'll be trying that one. have walnut triggerfish tonight. Might try it over jalepeno cheese grits.

Nope, wouldn't be caught dead there, but the wife goes to all that kind of crap, Southern Living, Pampered Chef, Mary Kay, etc. etc. Prolly explains why I'm always so damn broke.
