View Full Version : Easy and good batter for frying

2 eggs
2 Tbl spoons Excalibur Sweet & Sassy Garlic Pepper (or your favorite seasoning)
1 8 1/2 ounce box Jiffy corn muffin mix
2 cans of your favorite beer

Open 1 can of beer and drink half of it, put eggs in bowl and whisk, add seasoning and Jiffy mix pour half of the remaining beer in bowl and whisk till smooth. Drink rest of beer in can and open other can of beer. If the batter is not thin enough to suit you pour a little more beer in bowl and whisk it in. Drink some more beer, see if batter has the right thickness if not add some more beer till it seems about right. Drink rest of beer.

I used hogfish filets dry them well and dip them in batter pan fry them in large heavy skillet with 1/4 cup olive oil and 1/4 cup butter.

This would be good on about anything, hope you enjoy

I'm going to try that, but with 3 cans of beer.

i perfer a similar thing, but using a decent darker beer, like Killians or Yeungling

I've got something even easier. Season moist filets and dry flour in instant pancake mix. Browns nicely and comes out fairly crispy. The quickness and simplicity is a beautiful thing when you've been fishing/diving all day, just got done cleaning fish and are very hungry.
