I have never taken the time to make pink porgies, but I brought five of them home from the weekend Middle Grounds trip and figured I would fillet them up tonight and have them.
No BS, that fried porgy dinner that I just ate is one of the best fish dinners I can ever recall having. Better than hogfish, grouper, etc. The only thing I can compare it to is the fresh lake perch I used to get when in college up in Michigan.
Recipe is simple:
You’ll need at least 4 pink porgies for a meal for 4 or 5.
Dip fillets in a beaten egg.
Bread with Kelloggs Corn Flake Crumbs.
Pan fry in about an inch of oil.
The fillets will come out very crispy, and you are in for a real treat. There is a new fish favorite at my house, with everyone saying it beat any fish they’d had.
