Ingredients:
Egg whites
Capt. Crunch cereal
Olive oil, Butter, or Vegitable Oil
Grated Parmesan Cheese
Hogfish fillets

Preparation:
Take the Capt. Crunch and crush into smaller pieces, mix in the grated parmesan cheese, then put in a pan big enough to lay your fish in.
Separate the egg whites and put in a pan big enough for your fish.
Take the fillet and lay it in the egg whites then flip coating both sides.
Put the fillet in the Capt. Crunch and flip.
Put enough oil in a large frying pan to cover the bottom and pre-heat. (It doesn't take much)
When the oil is hot, drop in your fillet and sear each side for a minute or two. The egg whites glaze over pretty quick sealing all of the flavor inside.
Cook until done.

I'm down to my last vacuum packed bag of hog fillets. I'll give this a try during the week and post photos. Sounds interesting.

Got some fresh hoggies in the cooler, and will be trying this and spearchucker's ceviche recipe. Reports to follow. :D

Not a bad way to eat it. just expect more of a sweet snack taste than any thing else. it is great for days when you want to eat light. it realy does taste like a 'snack'. when i eat i like a bit more spice when it comes to dinner. but over all it was good.

that way kinda tastes like when you use jiffy cornbread mix. instead of capt. crunch, use the jiffy cornbread mix. mmmmmmm
