Caught a few small ones this weekend and would like to know if any of you guys have any recipes you'd like to share. I know about the milk thing but from there I'm up for any suggestions!

be sure you get out the blood line, it's very small but it will give the meat a real "tangy" flavor. soak the fillets in beer and about 10 cloves of fresh crushed garlic for a couple hours. heat up the grill or broiler and brush the fillets with olive oil, salt and pepper and/or your favorite seasoning. cook through and squeeze lemon over the fish right before you take it off the grill

We cut them into vertical steaks like a tuna, about 1/2" to 1" thick and blacken them in a cast iron skillet in the usual way.

Lionfish......finally did up the fish with the beer and garlic, came out really good and got lots of compliments, thanks!

I still have a few more fillets so I'll give the blacken a try soon, thanks Teufel-Hundin.

what about soup with the tails? ive heard good soup can be made with blacktip tails. i was wondering of a recipie myself...

NSOF, glad you enjoyed the fish. that recipe works well on any strong flavor fish, stingray, mullet, etc...

Hey "stoopid" (that just ain't right) the lower part of the fin is often used in shark fin soup, there is a recipe posted further back in this section that will get you on the right track but as bob3 says and from what i'm told, the prep on the fin is a real bitch....
