Blackened Fish
Grouper, Amberjack, Snapper or other firm meat fish.
Rub with Olive oil, Sprinkle with Italian and Cajun Seasoning, Get Grill good and HOT (with griddle sprayed with cooking spray on grill) , Cook on high heat 3 minutes each side for charcoal, 4 minutes each side Gas grill. Turn ONCE only. Be carefull turning over.
