Yellowtail Carpaccio
If you're looking for a new way to prepare all that yellowtail in your freezer this recipe is simple and awesome!
Ingredients: - Fresh yellowtail fillets - Green Onion - Red Onion - Tomato - Jalapeno - Sesame Oil (Chili Sesame Oil is also great) - Ponzu Sauce - Sesame Seeds Instructions: 1. Dice up green onion, tomato, red onion, and jalapeno and place in small bowls or leave on cutting board. 2. Slice yellowtail thinly like you would for sashimi. Angle of cut doesn't really matter...whatever you prefer. 3. Place on a plate or serving tray in a single layer. 4. Add a few drops of sesame oil to the center of each piece. 5. Add a little each of green onion, red onion, tomato, and jalapeno to each piece. 6. Sprinkle sesame seed on each piece. 7. Drizzle ponzu sauce around the edges and between pieces. 8. Consume! |

Looks good.
I'm curious; how long after having frozen YT can you de-frost and eat raw? I have defrosted ahi that was frozen for a month or so, trimmed the outer meat, and eaten it raw. Was pretty decent. The only time I ever had YT that was fishy was at a sushi restaurant.
Maybe you're not bleeding your fish properly or taking proper care of it before processing? That recipe looks good you should have recommended it with fresh fish!
