Broiled bay scallops on the half shell
In honor of Bay scallop season here in the West Florida area, I found a modified a recipe for broiled scallops on the half shell. Enjoy!
After cleaning scallops, save about 1 scallop shell for every 3 scallops you've shucked. You can clean the scallop shells by placing them in boiling water for 10 minutes, cooling down, rinsing, and then drying them out overnight in the fridge. Arrange shells on a baking sheet. Put 3 scallops in each shell. Take 1 stick of butter, softened, and add 1/2 teaspoon or more (depending on your tastes) of garlic powder, 1/4 cup parmesan cheese, and a tablespoon of parsley for color if you like. Blend in food processor. Take a dollop (about 1/2 teaspoon) of the butter mixture and drop on each scallop shell on top of the scallop. Sprinkle each with some kosher or sea salt and some fresh black pepper. Lastly, take two generous pinches of panko breadcrumbs (non-seasoned) and put on top of the scallop. Place tray in broiler on 500 (or broil) and watch carefully - 5 minutes should be perfect - you want the breadcrumbs to brown but not burn. Finally, after they are done and are cooling off, sprinkle with some lemon juice. I really liked either just slurping them down in one gulp, or using a small spoon to scoop them out. Also really good with a dash of hot sauce (like Crystal). |

This sounds good, wish I had more scallops! I sear-grilled mine this year on skewers to add to pasta, was really good.
Question - does boiling the shells change their color? |
