How To Sous Vide for Cheap
Hey all, I wanted to share this on here because I know that when I was a young bachelor in SoCal, spearfishing made a healthy diet easily attainable for me - but I wasn't a very good cook.
Sous Vide has many benefits but, in my opinion the best one is it is easy mode for cooking. Generally the more sensitive a meat is to time/temps the more benefit gained from Sous Vide - so Chicken & Fish are perfect. It's also really valuable for long low temp cooks, I do a lot of Ribs, Pork butts, etc. in Sous Vide - but things like Octopus would really benefit as well. So first off, here's how you do it cheap. - Large Capacity Crock Pot (just an OFF/LOW/HIGH switch - nothing fancy) Something like this - Cheap Thermal Switch Something like this - Ziploc FREEZER Bags, usually Gallon sized Freezer is important for plastic food safety, Ziploc brand publishes their plastic materials and food safety temps You set the temp you want in the switch, fill the crock pot with hot tap water - set it to High, plug it into the switch and you're set. The Food Lab is a great place to get recipes for Sous Vide A few highlights on Sous Vide: - Forget traditional cook times/temps - Sous Vide has much lower temps and higher times for food safety - The Food Lab recipes by Kenji Lopez often publish very detailed pictures and descriptions of textures and liquid content for a wide range of Sous Vide temps - Use Ziploc Freezer bags - they are food safe at Sous Vide temps (do not go above 190F, really only some veggies approach 190F in sous vide) -Search for the Water Displacement Method to get a vacuum seal with ziploc bags. - Anything you would traditionally smoke - liquid smoke is your friend - Never ditch your grill, Sous Vide won't replace it. If you're looking for a nice crust, Sous Vide - then pat surface dry - then finish quickly on the grill. It's awesome to put a Pork butt in the Sous Vide the night before then come home from work on Friday and only have a short grill session between you and amazing pulled pork tacos!
