Easy Dorado Recipe, *Mahi Mahi*
 
My neighbor went down south on a two day and ran into three big schools looking for tuna. They had almost an hour hot bite on each and he scored about 18 between him and his wife. He gave me 6 freezer bags full cause he had to much (i give him lots of wsb). Came across this recipe for tonight and it is really good. The big plus is it is stuff you probably have.

1/8 cup maple syrup
3/4 tablespoon cajun seasoning (can use more or less depending on whether or not you want a sweeter or spicier piece of meat)
1/2 teaspoon garlic powder
2 mahi mahi fillets

Mix all ingredients together except for fish. Spoon mixture over fish.

Place fish into shallow pan (sprayed heavily with cooking spray) and sautee with onions if desired for about 3-5 minutes on the first side and 2-3 minutes on the second side. Add more of the syrup mixture if you want.

Best served with rice.

***Can also marinate fish for a few hours for maximum flavor.

So easy and so good. The maple syrup almost candies the meat.

Thanks for posting that sounds so bomb, I love the combo of sweet and spicy, definitely gonna try this one soon.

Now all I need to get is some dodo. I bet this would work pretty well with halibut or reds.

I think I saw Chris Oak post something similar to this, it sounds great! Would love to hear how it tastes on other local species.
