triggers AKA 'chicken of the sea' in Singapore. the white flesh has similar texture to shreded chicken breast when grilled or pan-fried. easiest way to clean them is to get a sharp knife and cut off the head from the top. and followed by what OceanEd says earlier, use a plier to peel of its skin. I seldom fillet the fish, just chuck it on the barbie or in the pan, the flesh just flakes off when cooked.

there is a type of triggerfish here that attacks divers on a frequent basis.

they are quite territorial during nesting season in march to may, and will attack anybody that comes too near. I've got a chunk of my fins bitten off by one before, and it was one of those tough scubapro jetfins. A friend of mine had the top of his ear nipped off too. he looked like someone kicked him in the face, its was blue and black after the trigger charged at him.
