triggers AKA 'chicken of the sea' in Singapore. the white flesh has similar texture to shreded chicken breast when grilled or pan-fried. easiest way to clean them is to get a sharp knife and cut off the head from the top. and followed by what OceanEd says earlier, use a plier to peel of its skin. I seldom fillet the fish, just chuck it on the barbie or in the pan, the flesh just flakes off when cooked.

there is a type of triggerfish here that attacks divers on a frequent basis.

they are quite territorial during nesting season in march to may, and will attack anybody that comes too near. I've got a chunk of my fins bitten off by one before, and it was one of those tough scubapro jetfins. A friend of mine had the top of his ear nipped off too. he looked like someone kicked him in the face, its was blue and black after the trigger charged at him.

Thats much too pretty to be my triggerfish, but the description sure is dead on so far as the aggression is concerned...must run in the family. I'm actually getting excited about shooting some triggers...I need to get in the water...

I cooked up this one in my avatar and it was delicious. Wish i woulda had this thread around before i tried filleting it though. I started with a filet knife then took out an old steak knife to saw through the armor. Made a couple fish sandwiches out of it and was pleasantly surprised. Only trigger ive ever even seen diving off Palos Verdes in Socal and i wasn't sure what to expect out of the meat. I tell you what, if i ever see another, he'll be on the plate too!

We had one strung thru the eyes once and only once here. When the diver handed his stringer to a guy on the boat the bastard bit him right on the meat of the hand at the base of his middle finger. First and only time I have ever heard a grown man scream and cry like a 7 year old girl, scared the crap out of all of us. Took about three or four minutes before that evil little SOB let go. We call him Trigger to this day, there have been reports from his wife that he still has nightmares about trigger fish.

Good eating but as everyone else has mentioned...beware of the bite. Cut a small hole in the skin and then turn your knife up-side-down and cut the skin from from the inside out unless you're using an electric knife. Otherwise you'll be re-sharpening after every trigger!

I definately recommend stringing them through the gills and up through the mouth. The last trigger I shot (before I read this method) was strung through the eyes. While making a last minute check on shootable fish before ascending, I felt a sharp pain run up my leg. I looked down the the @$#%@#$ trigger had ahold of my leg through my wetsuit (3mil). It took stabbing him repeatedly with my knife for him to let go.

When I finally surfaced and surveyed the damage the managed to NOT tear my suit but he DID take a nice chunk of meat out of my thigh. Took only 3 months to totally heal!

I was warned early about these guys so I have always strung them the proper way. I love it when you shoot one and 3 more come to watch you string it hoping for free food. they are agressive little buggers

When targeting schooling or grey triggers bring two pole spears. One short pole with barbed point, one longer with an oversize but unbarbed or parylizer point.

Shoot with the unbarbed point, then string through the eyes on the other spear. The barbless spear holds the fish long enough to get the other shaft throught the eyes, then pops out cleanly and easlily. Use the "strung trigger" as bait to pull in and shoot the next ones. Back in the days when there were no limits on these critters it was possible to stack up 3 or 4 feet of triggers on the "stringer" pole during a relativly short single dive on a small drop target like a car body.

Just be REALLY careful with where that stringer pole is relative to EVERYTHING until the fish are in the box. A buddy has two matching scars about the size of a quarter on the back of his thighs, one on each. He got careless with the stringer twice and both times lost a hemiphere of meat.

Aren't trigger fish similar to parrot fish? Don't they eat the coral, which makes them susceptible to ciguelatara(sp?)? Just curious, I don't know much about them.

they are really good - be sure when you fillet your fish, to not through away the throats - they are DELICIOUS TOO! They are good fried or boiled - you can actually boil them like you would crabs and they will taste awesome - or make a West Indies "Crab" Salad using them -
