Trigger happy in San Diego

I was surprised to see the first little Trigger fish under the ledge when I was diving this afternoon. About 20 minutes later, when I was looking in holes, I looked behind me to see a good sized shape lurking in the murk. I swung the gun around and as soon as I realized that I was looking at a nice 4-5 lb trigger, I took a quick shot. I could not believe I saw two in one dive and got a nice one. I have only ever seen 1 in San Diego about 15 years ago. I used to eat them a lot when I live in Nicaragua. Are the ones here (though not common) good to eat? I was thinking of making a Ceviche.
