A new way to cook white sea bass
Or at least new to me. I may be the last one to get the word.
Chis Oak recently mentioned Miso Yaki on another board and said his wife was nuts about it. Then when Daryl Wong was at my house a couple of weeks ago and was taking white sea bass back to Hawaii with him, he said that was the way he was going to cook it for his regular Sunday barbecue crowd. So I figured I should try it. I was told I'd have to go to a Japanese market to find it, but there aren't any in white bread south Orange County, but I found some at Ralphs. I tried it tonight and it was very good. On Daryl's recommendation, I cut the fish about an inch thick and grilled it. He said to soak it in a zip lock bag for 2 to 4 days. The package says 4 hours. I compromised at 8 hours. It was very good, but I overdid it. Next time I'll use higher heat for a shorter time so as to get grill bar marks without overdoing the fish. Notice that they have a version for fish and a version for meat. I almost bought the meat version by mistake. Daryl said its even better with salmon.
