Fake lobster a la Cobia

Cut fresh or thawed cobia into bite-sized pieces. Boil a pan of water (2-3 quart pot, filled halfway with water) on the stove, with a teaspoon of Old Bay seasoning, a Tablespoon of sugar, and a teaspoon of salt. Lower cobia pieces into the boiling water. Remove each piece once it floats to the top. This will only take a 1-2 minutes. Sprinkle with a tiny bit of salt, and serve with melted butter and lemon.

DAMN was it good - also you could chop it up and use it in a lobster stuffing, or use the chunks in a lobster roll.

Sounds awesome. I'll have to try with cobia. We used to do that with Tilefish and cajun crab boil.

What I like about this is that with some tweaking you can make it exactly the way you want, and use chunks and scraps that you carve off the fish after you are done filleting.

So far cobia and Sherpa (sheepshead) have tasted the best using this method.

Going to try using the cobia chunks as the base for a lobster roll some time soon.
