Fun in the sun in Baja

Ok so I finally got around to putting some photos up of the Baja Trip I just took. I can say that I had a really fun time and I look forward to going next year. I hope I can take a couple more freshwater spearos with me so we can stick it to the salty dogs who think that us freshwater spearos don't know how to bring it.

I was able to land two dorados, one milk fish, one blue jack, Three large trigger fish, three parrot fish, one wahoo, and one pargo.

I all so missed. one sail fish, one large dorado, two wahoos, and a couple of rooster fish.

The best part of the whole trip was meeting some great guys and swapping bull shit with them. Sharing tips and tricks and getting to bring back some fish to share with some of my friends. Which by the way you missed out on one hell of a dinner last night J Stroup. LOL Macadamia Nut encrusted Mahi Mahi with Mango Lime Butter sauce and a couple of Bikini Martinis to wash it all down with.

Here is my killer wahoo (3 lbs) that I shot from about 17 feet away and stoned. (Best kill shot of the week)

Blue Jack I got on day one that was 11lbs

20lbs Milk Fish with a small Dorado.

A big bump head parrot fish

Dinner last night that J Stroup missed out on. LOL Maybe next time.

I'm impressed! Didn't know you were such a gourmet! I think it might be time to have a little Iron Chef action with the rest of that fish you brought back...Battle wahoo maybe?

J Stroup your invited anytime along with Any other local spearos who want to share in some of the fine catch. I would be down for a little Iron Chef Battle. I mean we compete for the fish why not with the fish right??? Wahoo next week sounds good...

These were all taken during the 2nd annuel Blue Water freediving World Cup Invitational in La Ventana Baja California I was there for 10 days but the competiton was over a 5 day period.

By the way here is the recipe I used to make the fish last night

Macadamia Nut-Crusted Mahi Mahi with Mango-Lime Butter

Mango-Lime Butter:
1/2 cup chopped fresh mango
1/2 cup dry white wine
2 tablespoons sugar
1 teaspoon peeled and minced fresh ginger
Juice of 2 limes
1/4 cup heavy cream
1/2 cup cold unsalted butter, cut into small pieces
Salt
Freshly ground black pepper

1/2 cup macadamia nuts, whole or pieces
2 cups panko (Japanese bread crumbs)
1/2 cup fresh basil
1/2 cup good-quality mayonnaise
2 teaspoons Sriracha (Thai garlic-chile paste)
6 (6-ounce) mahi mahi fillets
Salt
Freshly ground black pepper
Canola oil, for sauteing

To prepare the mango-lime butter, in a saucepan, combine the mango, wine, sugar, ginger, and lime juice and simmer over medium heat for 5 minutes, until thick and syrupy. Add the cream, mix well, and remove from the heat. Pour into a blender and blend until smooth. Return to the saucepan and simmer over low heat for 8 minutes, until the mixture thickens slightly. Add the butter, a piece at a time, and stir until incorporated before adding the next piece. Be careful not to boil the sauce, or it will separate. Season with salt and pepper and keep warm.

Preheat the oven to 450 degrees.

To prepare the coating, place the nuts, panko, and basil in a food processor and process until fine. Spread on a plate. In a bowl, combine the mayonnaise and chile paste and mix well. Lightly season the fish with salt and pepper. Evenly spread a light coat of the chile mayonnaise on one side of each fish fillet. Coat the same side evenly with the coating.

In an ovenproof saute pan or skillet, pour in just enough oil to coat the bottom and heat over medium heat. (Be careful not to heat the pan too hot or the macadamia nuts will burn.) Add the fish, crust stide down, and saute for 3 minutes, until golden brown. Turn the fish and place in the oven for 5 minutes, until cooked through and firm to the touch.

Place the fillets on warmed individual places. Serve with the mango-lime butter.
