Stuffed fish - wow!
This recipe works best with fillets of flounder or hogfish, though grunt could be used.
Ingredients: 6 Tablespoons butter, divided 1 small onion, finely chopped Parsley, fresh, 1/4 cup chopped (optional) 5 ounces crabmeat, lobster meat, or "faux" crab/lobster, flaked 1/2 cup Italian breadcrumbs 1 Tablespoon lemon juice Red Pepper powder Fish fillets (1 large fillet per person) Paprika Greek Seasoning Directions: 1. Preheat oven to 400 degrees, coat baking dish with non stick cooking spray or butter. 2. In a large skillet melt 4 Tablespoons butter over medium-high heat. Add onion and parsley. Sauté till tender. Remove from heat and add crab/lobster, bread crumbs, lemon juice, red pepper. 3. Place 1/2 of the fillets on to the dish, sprinkle with light amount of Greek seasoning. Spoon mixture on top of fish, then place remaining fillets on top (sandwich them), sprinkle more Greek seasoning on top. Melt remaining 2 Tablespoons of butter and drizzle over fillets. Sprinkle with Paprika. 4. Bake for 20 minutes or until fish flakes easily with a fork. You can make any type of sauce to go over it if you wish (Béarnaise, Hollandaise, Béchamel, Lemon-Butter, or Creamy Parmesan. Creamy Parmesan Sauce for Fish Ingredients: 3/4 Cup Parmesan (freshly grated or pre-grated) 1/3 Cup butter, softened 1/4 Cup Mayonnaise 1/4 Cup chopped green onion 2 Tablespoons Lemon juice 1/4 Teaspoon salt 1/4 Teaspoon ground black pepper 2 dashes hot pepper sauce like Crystal Directions: 1. Mix all ingredients together in a bowl. 2. Once fish is cooked as per recipe, spread mixture on top of fish, return to oven and broil until topping is bubbling and lightly browned, about 2 minutes. |
