red snapper
Who's got the best, simple recipe for red snapper? I'm thinking like sauteed in ham stock, white wine, garlic, & stuff... then baked with some kind of topping. Any chefs out there?

First off the suggestions you're starting with would overcook the fillet and then overpower the delicate flavor of the snapper.
Try this easy recipe. Heat oven to 500'F. It helps maintain the heat when you open the door and insert the fish. You'll immediately reduce heat to 450'F. Cover baking dish with foil. Spray lightly with non-stick spray. Avoid olive oil or olive oil spray as it WILL burn and add a horrible flavor to your fillet. Thin slice white or sweet onion and layer bottom of pan with it. Lay fillet skin side down over onion. Squirt fillet lightly with lemon juice insuring no seeds are put on the fillet. Again lightly coat fillet with white wine, I prefer Chenin Blanc. DO NOT USE cooking wine. It is 1.5 % salt by volume. Adding salt will toughen the the texture. At this point you can shoose to lightly cover fillet with minced garlic (no olive oil). Dust the surface with onion powder, garlic powder and dried orange peel (notice no salt) or fresh orange zest. Take small squares of butter (like you get in a restaurant) and cut into quarters. Top each fillet with serveral butter pieces, 3-4 for a medium fillet. Slice a naval orange very thin. Use a naval because there are no seeds with are bitter. Place 2 slices over each fillet. Pop into the oven, turn heat to 450'F. Bake for 10 minutes. Remove fish. Turn oven off. Use spatula to set aside fillets. Decant off all the juice/wine and onion from the baking dish into a sauce pan. Put fish back onto baking dish and into oven with door cracked to keep warm and finish. Add a dash of capers to sauce. Heat to low boil, reduce to high simmer and reduce for 3-4 minutes. Stir or onions will tend to caramelize (brown & then burn). Plate snapper. Serve sauce over wild rice mix. Sides are steamed carrots, brocollli and or asparagus. You can use this recipe for grouper but skin the grouper as the skin can impart a bitter flavor to the dish. Enjoy.

dredge fillets in flour then egg wash and then seasoned flour. Pan sautee in butter until golden brown. remove fillets and place on paper lined plate in oven. In pan, add lemon juice, shitake mushrooms, garlic, green onions, and a splach of white wine. bring to boil for 3-4 min and then pour over fillets. serve over pile of mash veg.

whenever i get fish i just go into my spice cabnet and whatever looks good ill add to the fish, comes out good all the time.

Chopped onions, add alittle chopped garlic, a pat of butter, whatever seasoning you like (cajun seasoning for me) put all in a tinfoil packet, throw on the grill. Best when fish was still swimming earlier in the day.
Add steamed veggies and pilaf rice for a side dish BAM!!! |

can't beat pan firied red snapper with lime and little salt. fry in canola or peanut oil. and add a little garlic to the oil before the fish, but take it out once its browned

Dip in egg.....Put Italian bread crumbs and fresh grated parmesan cheese in a ziploc. coat with bread crumb/ parmesan and pan fry in a black iron skillet in a little olive oil for 3 - 4 min. After you flip the first time sprinkle a bit of parmesan or even after its cooked. Thats my fave
