Yep its a bit gummy sashimi, AP is great anyway, including ceviche. If you fillet them get the ribs and grill'em, finger lik'in good.

I've had great success with charcoal grilling. Usually all it takes is olive oil and salt. Give it some grill marks on both sides and serve. Works great for African Pompano, Permit, Amber Jack, Yellow Jack, Cobia, etc. The left-over AP tasted like smoked chicken. Never eat left over AJ.
