yellowfin vs yellowtail

making some home made sushi tonight...which do you guys prefer for your sushi, yellowtail or yellowfin?

When it comes to a choice of ahi (yellowfin) or hamachi (yellowtail) you've just got to decide which is fresher. You can't go wrong with either. What time is dinner?

The hamachi (yellowtail) has much more of a flavor, if fresh, its the best.
The Yellowfin is more mild and takes on the flavor of whatever you put on it.
But both are YUM!

our local yellowtail isnt truly hamachi. its called buri in japanese. hamachi comes from japan. good chance the hamachi ur eating at the sushi bar is farm raised -- much higher fat content.

Wikipedia says "hamachi" versus "buri" is a size distinction:

You can't go wrong with either yellowtail or yellowfin, but they are very different in taste a texture.

Different species. This is from Japan which is the "Seriola quinqueradiata"





While the species we get here are "S. lanlandei" which are sometimes farmed for sushi but are not that great compared to seriola quinqueradiata.


The hamachi and buri pertains to the japanese grown fish. 6lbs are hamachi and over 11 lbs are called buri.
I prefer yellowtail either way though

I prefer Yellowtail, it just has more flavor- either local or farm...
Ahi is good too though. Ahi is like the gateway drug to sushi because of its mild flavor. As you learn to like sushi more, you begin to look for more flavorful stuff like toro, uni, mackerel, etc...

Thin sliced yellowtail, the thinner the better with a little jalopeno and thick sliced YFT, 1" by 3" slabs are awsome.
