Need some advice.

Hey Spearos, So I've been seen as a weird Floridian for a long time because I don't like fish. I've never liked the Fishy taste or smell and wasn't really a fan of some of the meats texture. My question is, now that I'll be living in the Keys and hopefully getting into diving more frequently. Is there a certain fish that I would possibly like (non fishy taste) if there are some you know of that I might like what are some of your favorite ways to cook them?

Re: Need some advice.

Since you're living in the Keys you have a plethora of options to try different recipes. I would test out some different dishes at restaurants and then try to duplicate it. I like most of my filets blackened with some sort of dipping sauce. Garlic, lemon and Tarragon almost always are a good compliment/season to fish. Thai Chili fish sauce is one of my favorites and goes with just about any fish. Red Snapper tacos with a ceviche style salsa is another great dish. Try some stuff out and just stay away from the real fishy stuff like Amberjack, unless you like a fish spread.

You can't spear um' but I'd recommend trying some snook. It's fillets are more like eating a steak. Try cooking it in any quality olive oil or coconut oil.

Re: Need some advice.

Killer Hogfish Sandwich recipe (from Hogfish Bar & Grill in KW): http://abcnews.go.com/GMA/recipe?id=10786169

Hogfish is non-fishy to the point of being bland if you don't jazz it up or complement it. It's also light and flaky, and not mushy like other fish. For the above recipe, I don't really care for the taste of mushrooms in general, but if you use something like Publix's "Gourmet Mushroom Blend", it's really just perfect. Try it.... Fry the fish in coconut oil, by the way. The recipe doesn't mention it, but I think it's pretty essential to smother the sandwich in a tasty tartar sauce. Make your own with fresh lemons. Plenty of recipes online.

I also like to melt a little butter, mix in some Jerk seasoning, rub some Jerk onto Mangrove Snapper filets, and grill them. Right on the grill. Baste with the butter mixture, but watch for flare-ups. Medium-hot, flip carefully when the fish goes from translucent to opaque about halfway up or a little more, and check to make sure it's flaky before you pull it off the grill.

With Mangrove Snapper, they don't have a fishy taste as long as you cut off the dark red meat near the middle of the filet.

Here's my favorite lobster recipe: Jerked Lobster

Grouper can be done real nice, and don't have a fishy taste usually, but they're so THICK that it's challenging to cook them right so you don't feel like you're just eating a bunch of fish.

This is a good idea. At least you can figure out what you like and don't like. Get an idea of what direction to head.

Re: Need some advice.

Also, keep in mind that fresh fish is less fishy.

Here's some advice from Dr. Seuss:
Quote:
Do you like fresh fish?
It’s just fine at Finney’s Diner.
Finney also has some fresher fish
that’s fresher and much finer.
But his best fish is his freshest fish
and Finney says with pride,
“The finest fish at Finney’s
is my freshest fish, French-fried!”

SO…
don't order the fresh
or the fresher fish.
At Finney’s if you’re wise,
you'll say,
“Fetch me the finest
French-fried freshest
fish that Finney fries!”
