Re: urchins?

i threw up when i tried the roe. my friends dad on the other hand will literally eat buckets of that crap. they make better chum or garnish(to most) than a meal. if you do want to eat them you crack them open and eat the yellow/orangish stuff that goes down the sides of the urchin. you can eat them when other shelfish are quarintined, they eat kelp not plankton, no idea on limits. you eat them raw only if im not mistaken.

Re: urchins?

If you take them turn them over so you can see the beek just take a knife and cut the beek out turn over and shake most of the junk inside will come right out. The stuff you want is the orange or yellow looking stuff it looks like fish roe a little. This will usualy stay inside stick your finger inthe hole and break the stuff lose and shake again it will come out easy. Now you have a cool shell if you leave it out in your yard for a month in the sun. You want to keep the roe cold but dont wrinse it in fresh water. I put it in a zip lock bag and put it on ice right away.

I like it with lemon juice on crackers or toast.

Here is what the shell looks like in a month after all the spines fall off. Here is another shell you find down south I used muratic acid on.

Re: urchins?

There seems to be a huge generation gap--the older divers who consumed almost every thing from that came from the ocean and the newer batch who consumes fish and maybe on occasion abalone

I have eaten Sea Urchins most of my life; they are very tasty and quite refreshing

There are a number of recipes for Sea Urchins. I have consumed them raw, I have prepared them as dips and served at parties, which were mostly populated by divers. No complaints and after the party the serving dishes were empty.

Two great long out of print books with sea urchin recipes..
1) Incredible edibles
2) The editable sea--By Paul and Mavis Hill, this is the best book, but very difficult to obtain a copy and when found $$$$.

Just remember every thing that comes from the sea is in some way edible.

Re: urchins?

Bluewater Gold Rush is another good book about Urchins. It's supposed to be pretty good when properly prepared. I've always been curious.

Re: urchins?

Bluewater Gold Rush (BGR) was published much later. I suspect that many of the recipes in BGR were from the two original books.

Bluewater Gold Rush should be very easy to locate..

Nate as I stated a huge generation gap...

Re: urchins?

I like uni but I can eat only about 1 or 2 per camping trip (not per day).

It is very rich so it's hard to eat more than a few. May be I just don't have the right recipe.

The only type I eat is from the Sonoma/Mendocino area. I usually mix it with cream cheese and spread it on cracker, may be add some lime juice.

It's also a lot of work for very little reward.

Re: urchins?

I love uni, however I rarely take urchins because I do not like cleaning them. Much easier to by them already cleaned There are multiple species of urchins and they are not all created equal; make sure you know which ones you are taking. My favorite way to eat them is raw with a little soy sauce.

BTW, while it may look like row, it's not. It's actually the gonads of the urchin.
