but to further kyle's point, isn't all of the force horizontal and would only act to compress the stock? for the muzzle to snap and fly back, wouldn't you need a vertical force component?

No it could split down the axle line or random grain line , or the stalk could just buckle under the load .

For a visual think about siting next to that gun with 800# of plate weights balanced on top of it .

If I am not mistaken, hardwood can normally handle being loaded with roughly 600lbs per square inch of cross sectional area. A 2x3 piece of wood with a 6 inch cross sectional area should tolerate 3600 lbs of direct force. If you play it safe with a 3-1 safety factor that is still 1200 lbs. I would still wrap it in carbon so I could sleep at night but unless I am wrong with my math it should be perfectly fine???

Wow, thanks for all the responses guys. I've just been through a ridiculously busy period of life, but have had time to start playing with the gun again. Point taken r.e. carbon wraps. It has taken a fair bit of consideration and re-design but I have shaved back a bunch of timber to accomodate the carbon wraps. I am going to end up with 15 layers of carbon in total - aiming for approx 3mm thick laminate which should well and truly provide the strength needed to keep the gun rigid and safe. I will also be using 14mm bands to start with and go from there.
This project is certainly taking time but I am enjoying it every step of the way

The thinned out muzzle to make way for carbon wraps - yes it is thin! but don't fear there will be 15 layers of carbon hugging this!
