Eating Yellow Jack..... Well I'll be darned
So, after seeing several recent posts regarding the tablefare of Yellow Jacks, I would like to offer up my opinion after finally eating one. They are delicious!! In fact, after filleting one up and cutting the pieces into little cubes, I noticed that the meat was quite similar to that of the California Yellowtail. One of my favorites and something that I ALWAYS order at sushi restaurants.
Anyone else ever thought this??? |

i just had yellow jack sashmi for lunch, personally I don't think they freeze well, but are good fresh

If you freeze yellow jack in a bag of water (I freeze all my fish in water) they tend to last a bit longer and taste better when thawed and cooked. Yellow Jack is great.

Freshwater? That's probably the worst thing you could do to the quality of the meat.

alot of the YJs i shoot end up as bait or canal fishfood b/c of worms. But if I find one that doesn't contain worms ill have to try this!

Yellow Jack kicks ass. Seriously underrated... It lends itself for so many different ways of preparation, and tastes good almost anyway you prepare it...

Agree! I had my first one last summer and immediately put it in foil on the grill. Very good and I will always be looking for one in the water now!

Not sure about the quality after freezing.
this talk of Red Grouper being mushy seems like hogwash to me! I've always found Red's to be great, b/c you get such a thick, chunky fillet compared to other groupers of similar size.... I have heard some people say they can be wormy, but have yet to see it myself. |

yeah i heard reds could have worms also. never actually ate it yet myself though, but yes yellow jack is amazing, smoked, grilled, raw(sushi) fish tacos, anything. I myself wont ever pass up a nice yellow jack.
