Have a Safe Opener
Good luck everyone on Lobster Opener.
I won't be around for opener, because I will be too busy changing diapers. My second daughter is being born on Friday. Have a safe opener, Dive Smart! Be especially careful at the BBQ. Don't be a fool, use a tool! In the spirit of sharing, I would like to share with you my favorite cooking methods: One of my favorite methods for cooking lobster is split down the middle, rinse the guts out, drizzle EVOO, add fresh spices/herbs/citrus and grill meat side down for a couple of minutes (until you see a grill mark on the meat), then finish cooking on the shell side for about 10 minutes on medium heat. Lobster cakes are one of the first things I plan on making this season. With all the meat that is typically just discarded from the legs, I use it for lobster cakes and Lobster Ravioli. Just use a rolling pin to roll all the meat out of even the smallest lobster legs. These are wonderful creatures that we are lucky enough to still harvest in good numbers, so let's try and make sure we waste as little as possible.

Wife, children & family are always much more important. A lobster or a hunk of fish are transitory in your life, your family is forever. Again congrats! SDM |

Congrat's on daughter number two..........ironically, I missed the opener last season because I had a procedure to prevent further kids
. Two daughters is enough for me and I fear the teenage years
