Check out this one. It's for swordfish, but if you have a big enough piece of cobe it will work nicely. A bit involved, but quite tasty. Substitute any spices you have instead of the fennel.

Salt, lemon, brush w/ butter while grilling.

Even the "two fat ladies" can't mess up a fillet of cobia.

Try substituting it in place of chicken for a chicken parmesan recipe. Double bread it in the Italian bread crumbs. I know grouper rocks this way.

we lay the cobia steak in a rectangular pan with an inch or so of olive oil, lay a piece of garlic in the oil and sprinkle both sides with Everglades Seasoning.
Place pan on foil on grill after hot for 8-12 minutes.
