Ooops
I speared a sheepshead. For the past 20 years I have passed on shooting these as I never could prepare them very well. Many of you have talked about how good they are if prepared right so somebody clue me in. I ended up taking it cause Mr Butt was not home. Lots of fish out there today, I could have a stringer of nice calicos if I had only remembered my stringer-DOH. I was thinking of making fish tacos out of her-BTW at 22.3 lbs it's one of the biggest females I have ever seen.

That is a huge female, the bull male would definately beat the current IUSA 21st century record, then you could have records #9..... right?
Make up fish tacos, dust the meat with flour and fry, I wouldn't use any batter. The fillets are going to be thick enough that you could butterfly them, stuff with spinach, tomatos, a little garlic and onions, tie up, brown in a pan then bake for about 20 minutes at 350' and dine like a king. I was the same I have only shot 3 sheeps in my life, the first was a 6lbr that made very average ceviche', the second 22lbr I made as described above, and the 3rd fish suffered the same fate. |

Nice fish! Sheepshead meat is killer in fish stew. Perfect texture for it. Other than that, I'd say ceviche, or teriaki (had that yesterday)

That is really something. We were just talking about how big females get in a thread a week or so ago. This is going to clear up alot of people's disbelief that female sheepheads get this big. It sounds like Todd knows what he's talking about when it comes to cooking. I'd get him on the phone when you're cooking it up and make sure you get his recipe right. Mmmm...my mouth is watering from all that talk about stuffing it with spinich and garlic. Nice fish!

Wow that's a big sheephead. Was it that color when you shot it? It looks like it might be going thru the transformation to a male, the jaw is pretty white and I can make out faint black bars. If it's a female there must've been a huge male around somewhere. I've seen a few BIG male sheephead lately, but I also saw tiny eight inch males at catalina.

Here is my favorite for sheephead. Cut the fillets into small slabs maybe 4"x4" place them on a bed of veggies of your choice fresh diced tomato, fresh garlic and a dash of olive oil place it all on a large square of heavy foil season fish and veggies with salt and pepper fold foil starting at one corner making small folds around the whole piece making an airtight pouch place in a hot oven for 12-15 minutes cook some pasta while fish is cooking take fish pouch out cut it open (careful it will have a lot of steam) place the fish and veggies on a bed of pasta pour juice left in foil over everything and enjoy. Simple, delicious and quick.

![]() You can steam the fillets, that's what they do in the restaurants (except they steam whole), put some soy sauce, sugar, ginger, green onion and hot oil on top.
