Parmesan Crusted Grouper
So my sister is in town for the week. With the lousy weather keeping us land-locked today and unable to dive, but still wanting to give her a taste of the keys, I cooked up the grouper I caught the other day. Came on hear looking for a new recipe to try and found one (it was part of a recipe for grouper and lobster scampi). I'll repost it hear for those interested. My sister is not a huge fish eater, but she loved this. I must say that it was DAMN GOOD...and very easy to prep (if you don't mis read the directions the first time like I did).
Parmesan Crusted Grouper: 3/4 Cup – Fresh Parmesan cheese, grated 1/2 cup – Butter, softened 3 Tablespoons - Mayonnaise 3 Tablespoons - Green Onions, chopped 2 Teaspoons - Fresh Garlic Chives, chopped 6 Fresh Grouper Steaks or Fillets (about 8 ounces each, one inch thick) 1/4 Cup – Fresh Lemon Juice 1/4 Teaspoon – Fresh Ground Pepper Combine cheese, margarine, mayonnaise, green onions, and chives in a small bowl; stir well, and set aside. Place fillets on a lightly greased rack in a broiler pan. Drizzle lemon juice over fillets; sprinkle with pepper. Broil 6 inches from heat 8 to 10 minutes or until fish flakes easily when tested with a fork. Remove from oven; spread tops of fillets with cheese mixture. Broil an additional 2 minutes or until cheese is lightly browned and bubbly. Remove fillets to a serving platter. If desired, garnish with lemon slices and fresh chives. Note - I only had two 1- 1.5" thick fillets, and the cheese mixture made from these ingredients was just enough to use on the two fillets. You probably need to make more for 6 fillets. Also, I couldn't find garlic chives, or regular chives, so instead I added a "pinch" of minced garlic. Everything tasted great.

My girl and I were looking for a new fish recipe on Sunday night, this looks perfect.
Thanks for sharing! I was actually looking for a new spiny lobster recipe as well. We typically broil them, grill them or fry them. I was wondering if breaded lobster would turn out very well? I was thinking that cutting them into chunks and doing this rather than whole would work best. Has anyone tried this before? Steve |

Thanks, that looks like a great recipe as well.
I'm really interested in seeing if anyone has breaded lobster before though. I had the idea after I made breaded pork chops last week, but have yet to try it out. I was thinking I would mix some seasoning in with the bread crumbs, seperate the meat from the tail, cut it into bite size chunks and throw them into some egg batter then the bread crumbs. Then I would bake them in the oven. I have it in my head that this would be a phenominal way to cook lobster. I'll try it out this weekend and let you know how it goes. Hopefully I'm not cooking up a disaster. Steve |

you wont be, try finely chopping macadamia nuts then mixing with panco bread crumbs, and herbs but remember dry, wet, dry, first flour, then egg wash then bread crumb mixture!!

I Like shredded coconut mixed with the panco bread crumbs and fried in coconut oil its good. Also good with yellowtail, mutton and hog fish.
