I rub it with garlic, salt, black pepper, red peppers, brown sugar, paprika and then grill it. Serve on a bed of white rice wtih a jerk marinde on top. simple as hell.

Besides raw. I am a particular fan of the taste of ginger and its interaction with the tast of yellows. I make nice pieces out of the filet, rub in soy sauce, rub in peanut oil, then rub in minced ginger, then chopped garlic and finally some sea salt and a little pepper. Do not use lemon with this recipe!!! Put this on the grill and cook to taste...can't go wrong!!!

1/2 cup mayo, 1 cup sour cream, 1 small container green chile, 2 chopped chives.
Sauté fish in butter and a dash of white wine for about 4 minutes. Put into baking dish and cover with mayo/cream sauce, broil for 8 minutes. Killer with damn near any fish.

This I do know about.
Drop your fillets in zip lock with Italina dressing (I prefer bernsteins). It doesn't need to marinate even 5 minutes. Put on grill and add salt. If you want to go one extra step use some mesquite chips on your coals. This is the simplest and tastiest you'll find outside of raw. To put it in perspective. I kill and eat lots of stuff surf and turf. My wife won't eat any of it cause it didn't come from a cellophane rapper but this stuff she begs for. 5869 |

Combine some mayonnaise and some wasabi to taste, add a little sesame oil, mix it all together and coat the filets. Grill them over a hot fire and serve with a nice gewürztraminer (very cold). Very simple and always a crowd pleaser.
