Don't Mess with her and her Biller

Well we wondered out of sebastian and was surprised by how nice of a day it was (other then the bees that took over my boat and came out at a key moment) My girl went trigger happy on sheeps flounder and triggers, while my dad got a nice fathers day grey

What's your recipe for ceviche? Preferably it includes cilantro, orange juice and a tiny bit of jalapeno.

(I checked out a few recipes, most included lime or lemon juice, me don't like much lemon w/fish)

Triggers ceviche is my favorite. b
It has to marinate in small pieces in lemon juice or lime with a drop of gin or tequila for about an hour.
Then throw away the fluid and season with onions ( red are better, washed in water for 5 minutes ) vinegared capers, oregano, cilantro, dried chili and fresh jalapeno peppers diced, 1 or 2 fresh diced tomatoes, a good olive oil . Add salt at the last minute....lots of toasted bread and of toasts

There is a recepie for ceviche in the latest Spearing Magazine that I just tried tonight. I used all fresh ingredients: Hog & Shrimp for the fish and even squeezed my own Lemmons/Limes and cut up my own erbs... I'm not touching it until tomorrow but man it looks tastey! We should start a new ceviche recepie thread or "bump" an old one.

My Fav is: 4-5 fresh squeezed limes (they cook the meat), "white sweet" onion, fresh ground garlic, 1 chopped tomato, dash of salt, diced red & green bell pepper, fresh cilantro. Let sit at least a couple hours, drain the juice. never tried capers but that would be good too and I did mix Trigger/Hog and it was great! Serve plain or on crackers, toasted Pita Bread, with chopped jalepenos.
