Mustard Snapper
Recipe:
mustard - I like spicy grainy brown mustard garlic parsley parmesan cheese bread crumbs avocado oil salt pepper red pepper flakes Prep: Preheat oven to 400 degrees. Combine all ingredients in a blender or small ninja thing and pulse semi-smooth. Coat bottom of fish with avocado oil. Place filets in baking dish. Spread on topping. Bake in oven until done, but the last 2 minutes change oven temp to Broil. Notes: I didn't list amounts because this depends on how much you are making. My cook time was 18 minutes at 400 and 2 minutes at Broil - it was a thick snapper. Fish story: Diving a wreck and the guys were on the other side stringing up a few snapper. I peeked inside and started flashing the light around. I looked in a dark corner and the snapper flew out at me. It was about to bolt back into its hole. I turned my gun to the hole and shot as the fish tried to run back into the hole. While trying to pull it out I hit my head on the wreck and started seeing tweet tweets. I needed to calm down. I called over the guys and they pulled the fish out of the wreck and we sent it up. We thought it was a cubera but turned out to be a nice dog snapper. |
