Fish first courses

The first dishes from sterlet get no worse. They are aromatic, nourishing, nutritious. In any prestigious Russian restaurant, an ear of sterlet is always served, the recipe of which is considered to be the pride of the place. But how to cook it? Firstly, the fish is needed for good fish soup only fresh. Sometimes even live. Secondly, any real ear, including an ear of sterlet, whatever recipe you take, is made from only one kind of fish. Third, when cooking for each liter of liquid flows in a tablespoon of vodka. And, finally, in order for the Ushitsa to be “sweet”, from the very beginning of cooking, the roots and stalks of parsley, celery, allspice of peppers, a sprig with several bay leaves must be laid in the water along with the meat. You can put a whole onion. If you want to add potatoes, then put it in a small amount and only when the broth is almost ready.

Another recipe with ingredients laid out. The clear soup is very tasty. Sterlet is a primitive fish with armoured plates (which are removed) and has outlived the dinosaurs, part of the flavour comes from the cartilage parts of the fishes' soft pseudo "scales" which dissolve when cooking.

A Sturgeon Soup variation.

Includes notes and photos on cleaning mucus off the Sturgeon and cutting it up.
Ingredients
Sturgeon 1500 gr
Carrots 200 gr
Celery Stem 50 gr
Leek 1 pc
Soy Sauce 50 ml
Lemons 1 pc
Turnip 100 gr
Onion 1 pc
Fennel 100 gr
Zucchini 200 gr
Salt 0.5 teasp
Ground black pepper 0.5 teasp
Vegetable oil 30 ml
Recipe Recommendations "Sturgeon soup"
To make the fish soup, you need to prepare a saturated sturgeon broth, cooked with the addition of aromatic vegetables.

What is the "stuff" added to the soup around minute 7:00 on the video?
Interesting, the addition potato to the soup ..if the fish is frozen ..probably to absorb the fishy taste frozen fish may have
On recipe 1 "..If the fish is frozen, then during the cooking of the fish you need to add potatoes..."

I was wondering that myself, which is why I went hunting for other versions. Whatever it is it looks rather odd, but the cook adds quite a lot of it to the soup. Sturgeon is a fish that is not commonly thought of except for caviar, so these recipes were of interest.

I received an answer from the guy who put the first soup video up and it is Икра. I nearly fell off the chair because Икра is caviar!

That Sturgeon recipe is very close to the soup my mother used to make with Grass Carp. The turnips were the clincher.
